Anatae

The particularities of our Matcha Ceremony:

Harvesting and production are 100 % manual, which allows you to get a matcha without bitterness.

In the spring, in Nishio (Japan 🇯🇵), our farmers harvested the youngest leaves in their tea trees. They were able to really choose the leaves richest in antioxidants, those that do not contain bitterness. The leaves were then steamed for a few seconds to freeze their properties.

Later, to avoid any bitterness and keep only the tender heart of each leaf, the most rich part in benefits, the main ribs of the leaves were, by hand, carefully removed. This goldsmith's work makes this matcha a product with incomparable quality.

Finally, after being carefully dried, the leaves were ground between two granite grinding wheels, to finally obtain a 100 % natural powder, very rich in flavors, and without any bitterness.

This matcha is a powerful green powder and the authentic flavor of the heights of Japan.

🌱 Zero chemical product:

All our tea trees live to the rhythm of nature mixed with an incredible multitude of insects that we leave in them in peace.

Coming from the tea ribs and stems, parts of the plant that contains very little caffeine, this powdered hojicha can be drunk at any time, and even be consumed by children and people with a fragile stomach.

This hojicha is therefore a very good alternative for coffee lovers wishing to reduce their consumption of caffeine.

Thanks to its natural calming l-theanine, the hojicha relaxes, reduces stress and anxiety. Its vitamin C fights against the impurities of the skin and preserves the elasticity of it. 🌱 Bitterness

🌱 The particularities of our Hojicha:

This hojicha is a grilled organic green then ground. The roasting stage changes the taste of green tea and gives it a wonderful grilled flavor that can make coffee or cocoa think.

This tea comes from the ribs and stems of the tea tree that were put aside during the production of Matcha and other teas. He was born around 1920, in Japan, in an idea of "zero waste".

In addition, in Kyoto, he quickly became a way to attract customers to tea shops, thanks to the incredible odor released by the roasting of tea.

The roasting process retains vitamins and antioxidants of tea but eliminates its tannins, which are responsible for the bitterness of certain teas.

Small whip made in Japanese tradition and know-how.

Matcha being a green tea powder, and not a tea that is infused, it must be mixed. The traditional utensil specially designed for this is the "chasen".

It is carefully cut from one and the same piece of bamboo in order to obtain no less than 120 stems! The latter make it possible to whip matcha and obtain a slight foam on the surface of the drink, as the Japanese tradition wants.
